The mediacal name is Paronchia it caused by the citric acid of limes and lemons. It can also be caused by hands being constantly wet. The cuticle is destroyed you can look at the cuticle as a gasket that prevents pathogens from getting under the skin but, when it is compromised it is open to infection. Because your hands are always wet they are more likely to provide a breeding ground for the infection. There is no perminent cure since you will probably continue to bartend but several things can help. First you should see a doctor and get a broad range antibiotic and a topical cream like bactoban. If you are still bartending try to wear a rubber glove I know it is pain but letting the cuticle grow back is necessary if not a glove they make latex finger protectors. If you can not see a doctor a good natural remedy is tea tree oil you can get it from a vitamin store apply several times a day. Also throughout your shift use a waterless bacteria soap on your hands. Hope this helps good luck.
